Beet Fir Trees

Snack and original decoration of the New Year's table. Beet fir trees will occupy a worthy place next to rolls, rolls, canapes and sandwiches. Delicate white cheese filling with an unusual lemon shade and the most useful avocado - in a word, a win-win option. And note, no mayonnaise!


What do you need:(for 6 servings)6 small beets
150 g soft cheese
1 tsp lemon peel
2 cloves of garlic
1 avocado
1 tsp thick cream
1 tsp lemon juice
salt, freshly ground pepper - to taste
greenery - for decoration

6 wooden skewers

How to cook beet fir trees:

1. Boil beets in their uniforms or bake in foil until cooked. Peel and cut into slices 3-5 mm thick. Add salt and pepper to taste.

2. Cheese mixed with lemon zest, chopped garlic and ground pepper.

3. Remove the avocado pulp with a spoon, add sour cream, ground pepper and carefully knead with a fork.


If you bought a solid avocado, place it overnight on a warm battery, placing a napkin. By morning, the fruit will become softer.

4. Put a little filling on each beet circle, taking the widest one as a basis, so that the Christmas trees are stable.

5. Fasten the resulting Christmas tree with a skewer. The photo shows the process itself, the skewer needs to be shortened in advance.

6. Also the cream for the filling can be deposited using a pastry bag.

7. Season the finished Christmas trees with ground pepper and garnish with fresh herbs.

Liver Rice Salad

This recipe is for those who absolutely can not imagine their festive feast without all sorts of puff salads with mayonnaise. But this is the New Year, it means that any wishes should be fulfilled immediately! If you cook with mayonnaise, then only with homemade. A portion of the salad will not allow you to eat too much.


What do you need:(for 5-6 servings)1 tbsp. steamed rice
500 g beef liver (for a more delicate taste beef liver can be replaced with calf or chicken)
4 boiled eggs
200 g of hard cheese
200 g canned corn
flour - for breading
vegetable oil - for frying

Homemade mayonnaise:3 yolks
150 ml of vegetable oil
30 ml of lemon juice (1/4 lemon)
1 tsp Russian mustard
1 tsp Sahara
a pinch of salt

How to cook rice salad with liver:

1. In cooking the liver has a few secrets that will help make it soft and juicy.

Liver always choose fresh, not frozen.

Rinse the liver with boiling water and immediately immerse in cold water. With a knife, remove the outer film, soak it in milk for 1 hour. Cut the liver into pieces with a thickness of 1 cm, do not salt, roll in flour.

2. Heat the vegetable oil in the pan, lay out the liver pieces, fry for about 30 seconds and turn. Then again fry the liver for about 1.5-2 minutes on each side.

It is important that the oil be red-hot. In this case, a crust forms immediately on the liver, which keeps all the juice inside. The liver is cooked on medium heat until the juice becomes transparent instead of red when piercing.

3. Put the prepared liver on a paper towel and blot with a napkin so that excess oil is absorbed.

4. Grate the cooled liver on a fine grater.

5. Simultaneously with cooking the liver, boil the rice until ready and rinse in cold water.

6. Drain the corn.

7. Divide eggs into whites and yolks, grate separately on a fine grater.

8. Grate cheese on a fine grater.

9. For mayonnaise, put the yolks in a bowl, add salt, sugar and mustard. Vigorously whisk 1 minute.

10. Add lemon juice to whipped yolks and beat slightly.

11. Continuing to beat the egg-lemon mixture, add a thin stream of vegetable oil and beat the mixture to the consistency you need.

Lemon juice is usually added to traditional homemade mayonnaise at the end of cooking, and this mayonnaise is obtained with a denser smooth texture. If you first enter the juice, mayonnaise turns out lush and airy. Especially good to keep this sauce in the cold for at least 1-2 hours.

12. Put the salad in layers: beef liver, rice, corn, cheese, egg white and yolk. Lightly grease the liver, rice and cheese with mayonnaise.

Leave in the fridge for 2-3 hours and decorate with greens before serving.

Salad "Shrimps on a snow cushion"

It is such a shock dose of protein that, even combining a salad with a sauce, you can safely afford a portion of gastronomic pleasure, without thinking about the consequences. What do you need:(for 4 servings)200 g of hard cheese
4 boiled eggs
400 g shrimp
1 pot of lettuce

Sauce:7 quail eggs
150 ml of vegetable oil
1 tsp mustard
1 tsp Sahara
a pinch of salt
1 lime juice
cilantro and dill - to taste
freshly ground pepper
lime peel

How to make a salad "Shrimp on a snow pillow":

1. Grate the cheese or chop into noodles with a special fruit knife.

2. Eggs divided into white and yolk, grated.

3. Mix the cheese with egg yolk.

4. Boil shrimps in salted water for 3-5 minutes, cool and peel.

5. For sauce, combine quail eggs, sugar, salt and mustard, beat with a mixer for 1 minute.

6. Continuing to beat, add a thin stream of vegetable oil.

7. Beat up to the state of dense soft mass.

8. Add lime juice, chopped herbs and ground pepper.

9. Put a salad on a serving plate, make a “snow pillow” of egg white.

By the way, men like a warm chicken salad, they will not even notice the absence of harmful and fatty mayonnaise.


What do you need:(for 4 servings)400 g chicken breast fillet
1 onion
4 boiled potatoes in their uniform
2 green apples
2-3 cloves of garlic
mixture of lettuce leaves
vegetable oil - for frying
salt - to taste

Sauce:300 g of thick natural yogurt
1 bunch of cilantro
1 bunch of dill
2 tsp. honey
2 tbsp. lemon juice
salt - to taste
freshly ground pepper mix - to taste

For this dish it is better to use deep plates to keep the salad warm longer. Before serving salad plates can be slightly warm in the microwave.

How to cook warm chicken salad:

1. Chicken fillet cut lengthwise into thin layers, and then cut into long strips. Do not salt.

2. Heat oil in a pan, put each strip, giving it a different shape. Fry each side until golden brown. Put the chicken on a paper towel to absorb excess fat. Lightly salt.

3. Chop onion finely, fry until golden brown and mix with chicken.

4. Remove apples from the core and cut into cubes. Sprinkle the apples with lemon juice so that they do not darken.

5. Cut potatoes into cubes.

6. Mix chicken, potatoes, apples and add chopped garlic.

7. For the sauce, mix yogurt, lemon juice, chopped greens, ground pepper and honey.

8. Put a handful of lettuce leaves in a serving plate.

9. Before serving, warm the chicken mixture well in a skillet without oil over medium heat and place in a plate.

New Year's spicy salad with a twist

Salad appetizer or even salad dessert - this dish is radically different from the many familiar salads. Spicy blue cheese is incredibly combined with roasted walnuts in caramel, subtle pear notes and balsamic. Gourmets, your choice!


What do you need:(for 4 servings)2 packs of fresh spinach (can be replaced with any leaf salad or salad mix)
150 g of blue cheese (we used the most affordable low-cost option)
2 pears
1 tbsp. walnuts
2 tbsp. honey
0.5 tsp vegetable oil

Refueling:200 grams of natural yogurt
3 tsp. corn mustard
1 tbsp. balsamic vinegar

Pears for this snack is better to choose hard enough, but ripe and moderately sweet.

But caramel nuts should not be replaced with raw chopped, because they are the second most important component after blue cheese.

How to cook New Year's spicy salad with a twist:

1. Put the nuts in a hot frying pan and, stirring quickly, fry on medium heat until a pleasant characteristic aroma appears. Make sure the nuts are not burnt.

2. Pour honey into the pan and mix the nuts thoroughly. Continue to fry until the nuts have a beautiful caramel color and gloss. The whole process will take you 1-2 minutes.

3. Put the roasted nuts on a greased plate. Try to spread the nuts so that they do not touch each other and do not stick together as they cool down.

4. Chop the pear into thin slices, break the cheese into small pieces.

5. For dressing mix yogurt, balsamic and mustard.

6. Go through the spinach and put on a plate. Arrange the pears, cheese and nuts, and the sauce served separately.
